When fall meets summer: vegan pumpkin protein ice cream along with maple coconut whip cream
I feel like fall has come and gone, maybe because the weather wasn’t fall-ish and turned right to winter or because of the turn of events in my family. My maternity leave is not exactly how I thought it was going to go. Bryce, my …
Happy Halloween! I was never one that got into Halloween. I don’t like scary stuff like zombies, clowns, ghosts, and all the Halloween brings. I do like candy and being with people. I would always home make my outfit or throw something together like a cowgirl. This year we have a 4 week old to dress up. I really wanted to make him a hei hei outfit (from Moana). My niece and brothers called Bryce Hei Hei when he was in my belly. My niece is being Moana for Halloween and wanted Bryce to be Hei Hei. Honestly I didn’t feel like making and outfit. My SIL gave me a Woody outfit, so he will be wearing that. I am making dinner and having my family come over to trick or treat around our neighborhood. It may rain, which we wont be going out far with this cute 4 week old. He may be smiling because he tutted or pooped, but I will take it!

When I think about Thanksgiving turkey and pumpkin pie come to my mind. Growing up working at my family’s farm market, I worked in the bakery. The nights before Thanksgiving we would work late shift trying to get the pies and bakery orders completed. I …
Yesterday I ran my first full marathon. I didn’t collapse or walk at all and was able to sprint through the finish line (thanks to friends I met during the race)! When I saw my husband, mom, and dad at the finish, I started crying. This is a huge accomplishment for me and without their support (and all my other friends, family, and clients) I would have struggled {more}. I will have a separate blog post for more details about my race, especially describing how I mentally and physically got through the race. After the race I had a delicious meal at the Reading Terminal, a beer, cookie, and later for dinner I had an apple and this delicious bowl of oatmeal. I am telling you, I crave this pumpkin oatmeal bowl!
This pumpkin spice oatmeal has been my go-to breakfast. I wake up looking forward to it! Filled with pumpkin puree, omega-3 fatty acids, fiber, protein, and flavor while staying low in sugar. You will be satisfied until lunch time with this oatmeal.
