Yesterday I ran my first full marathon. I didn’t collapse or walk at all and was able to sprint through the finish line (thanks to friends I met during the race)! When I saw my husband, mom, and dad at the finish, I started crying. This is a huge accomplishment for me and without their support (and all my other friends, family, and clients) I would have struggled {more}. I will have a separate blog post for more details about my race, especially describing how I mentally and physically got through the race. After the race I had a delicious meal at the Reading Terminal, a beer, cookie, and later for dinner I had an apple and this delicious bowl of oatmeal. I am telling you, I crave this pumpkin oatmeal bowl!
This pumpkin spice oatmeal has been my go-to breakfast. I wake up looking forward to it! Filled with pumpkin puree, omega-3 fatty acids, fiber, protein, and flavor while staying low in sugar. You will be satisfied until lunch time with this oatmeal.
Pumpkin Spice Oatmeal

1/2 cup oatmeal
1 1/4 cup water (or milk)
2 tbsp pumpkin puree
3/4 tsp pumpkin pie spice
1/4 tsp cinnamon
1 tsp chia seeds
1 tsp flaxmeal
1/4 cup egg white
Toppings: apples, low sugar granola (I used LarkEllenFarm granola), drizzle of maple syrup
Directions
- In a bowl, add oatmeal, chia seeds, flax meals, cinnamon, 1/2 tsp pumpkin pie spice, and mix.
- Add water (or milk) and pumpkin puree. Mix together. Microwave for 2.5 minutes.
- In a non-stick skillet, add egg whites and sprinkle 1/4 tsp of pumpkin pie spice. Scramble eggs until golden and cooked to preferred texture (I like my eggs crispier).
- Add cooked egg whites and toppings to oatmeal
- Enjoy on a nice fall, crisp day!
