Shrimp Scampi

Anyone else in complete shock that it is almost August? This summer is going by so quickly and I hope you are all enjoying it so far. We have enjoyed different beaches from Delaware beaches to Wildwood and Ocean City in New Jersey. In the summer, I enjoy the fresh seafood and produce. My favorites are salmon, crab, and shrimp. This past weekend, I enjoyed a crab cake salad with mango and roasted pepper from Lake House in Franklinville, NJ. So yes a very a healthy choice, but then my mom and I finished my dad’s shrimp scampi. It was so good, but not the healthiest choice!

Your usual shrimp scampi is made with butter, white pasta, and cheese. I took my family’s farm fresh produce to create a healthier version and add color. I cut back on the butter and added olive oil for a heart healthy fat version. Added fresh herbs and lemon to add a punch of flavor. Once you spiralize the zucchini, this dish is very quick to make. If you do not have a spiralizer, you can buy the zucchini already spiralized (probably a little more costly).


Shrimp Scampi

Ingredients

  • 1 tbsp butter

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 cup white wine

  • 1/2 lemon, juice

  • 1/2 lb shrimp

  • 2 zucchini, spiralized

  • 1/4 cup cherry tomatoes, halved

  • fresh parsley

  • S&P

  • optional: Parmesan cheese

Directions

  • In a large skillet on medium heat, melt butter with olive oil and garlic.
  • Add white wine and lemon juice. Let it cook down for 5 minutes.
  • Add shrimp to cook for 1 minute.
  • Add zucchini, tomatoes, parsley, and S&P to taste. Cook for 8-10 minutes, until zucchini is tender.
  • Top with more herbs and optional Parmesan cheese.
  • Enjoy this healthier version of shrimp scampi.

As you start this new month, walk into it with positive intentions. What do you want to focus on this month? Examples: eliminating the negative talk, adding more veggies, increasing water, spend more alone time, saying ‘no’ to anything that will not serve you, or just continuing your healthy habits? Write down your intentions for this month and place in a spot that you can be reminded about it.

As I go into August, my goal is to speak positive as my pregnancy is at it’s last 2 months. We have had some hot days here in Jersey and I have been feeling great with a few light headed occasions from not drinking enough water. But, I need to remind myself that my body is going through changes and to take it easy on myself. I try not to complain or speak negative as no one wants to hear that! If you find me talking negative, hold me accountable and remind me of my intentions this month!
